Celebrating with Food Safety  

If you are planning to mark "the big game" next Sunday with food, it is important to take precautions to avoid foodborne illness. Kellogg Schwab, PhD, professor of Environmental Health Sciences at the Johns Hopkins Bloomberg School of Public Health, explains what you can do to avoid the risk of becoming sick.

Remember to:

• Wash hands with soap and water for 20 seconds.
• Thoroughly cook meat, poultry and eggs.
• Avoid cross-contamination of foods by keeping raw meats separate from other foods; immediately wash hands, utensils, cutting boards and work surfaces with soap and water after contact with these uncooked foods.
• Keep warm and cold foods at the appropriate temperature. Foods should not be left out at room temperature more than 2 hours.
